Is there a way to see which pro functions are unavailable in the lite version of thsi plugin?
In particular, is the add custom field function a pro only function? Because I don't see this in the lite version.

Yes, it's a limitation on the newsletters-lite plugin.
You can have one mailing list, 500 subscribers, send 1000 emails per month and the custom dynamic fields are not available.
